Bev’s Classic French Vanilla

2 egg yolks

2/3 cup sugar

1 cup half-and-half

2 cups heavy cream

1 tablespoon vanilla extract

Senior Care in Cedar Grove, NJIn a saucepan, beat the egg yolks with a whisk. Add sugar and keep beating until the mixture thickens Stir in the half and half; heat and stir until thickened again. Remove the mixture from the heat and let cool. Stir in the heavy cream and vanilla extract. Cover and chill in the refrigerator for one hour or until needed. Pour into ice cream maker and process according to your machine’s direction. Makes about 1 quart.

French Latte Ice Cream

¾ cup French vanilla liquid coffee creamer (like international delight or coffee mate)

1 ¼ cups milk (2% is fine)

2 tablespoons instant coffee

1 cup light whipped topping

Place milk in a microwave safe bowl and microwave just until it is warm enough to dissolve the instant coffee crystals. Don’t let the milk scald or boil. Add the coffee crystals and stir mixture until they are completely dissolved. While stirring, add in the creamer. Add the whipped topping and mix well. Don’t worry about deflating the topping. Put it into your ice cream machine, following your manufacturer’s instructions.

Place in the freezer for a minimum of 4-5 hours. After 2 hours, take it out and stir it up, just so it doesn’t freeze into one large solid chunk!

Boston Cooler

8 ounces ginger ale

1 scoop vanilla ice cream

Pour the ginger ale into a very large glass, preferably with a fairly wide diameter mouth. Add 1 large scoop of the ice cream. It will foam quite a bit, that’s why you need to use a large glass. You could add more ginger ale or more ice cream, whichever one suits your fancy.
